SONG DYNASTY (960-1279) During the Song dynasty (960-1279) the practice of tea-drinking changed dramatically from the boiled and salted herb of the Tang. At this time, finely milled tea powder was now placed directly into the tea bowl and whisked into a froth with hot water (rather than simmered in a pot).
